    Yeah, I always thought it was a squirrel/bunny/whatever's on hand sort of thing. But I'm sure for consistency, and ease of ingredients, restaurants need to use chicken or pork. That's what makes sense.

    Some versions of chile sauce include vinegar. I know that I prefer brunswick stew to have a hint of that vinegary tang. :dunno:

    I don't know your history with brunswick stew. I read wiki on it and it's a small-game dish. I was taught this dish (a rough and probably terrible version) by my parents while growing up.

    Vinegar is used on small game to break down their connective tissue. I'd imagine that brunswick stew evolved around soaking little rats (squirrels) in vinegar to make them edible.

    I know I'm having a one-way conversation here but it fascinates me that my uneducated parents taught me a thing. I grew up doing this.
