...I think I've written maybe 2 reviews on amazon ever.. lol

 

It's "together" because it's crisp crust corned beef, rather than a traditional boiled or braised, and it def fell apart in the middle, which was the intention. It just sliced up nicely and held together for pics because of the crispy crust that was holding it together. Also, you can 100% overcook corned beef and people often do, it turns the texture from soft and tendy to tough and chewy.
