I cut the chicky into chunks (with a little salt, pepper, garlic & onion powder) and then I dumped a whisked up mix of corn starch and egg on it. Gotta whisk up the starch/egg until it gets all foamy cause otherwise your corn starch won't dissolve enough and it'll be all clumpy. Dump it all into a super hot pan with some oil (I went veg and did a really shallow fry)- it'll look like a pancake but that's good cause you don't wanna break the chicken apart till after the bottom gets nice and browned and then you flip and you can nudge the pieces apart while the bottoms cook. I used to fuss too much over it on the first side whenever I would do a corn starch batter and it took some more patience than I normally possess After everything was nice and browned and crispy, I added it to a pan with my sesame sauce that was already nice and hot, did a quick mix around so that it would absorb the sauce, and then served! Pretty easy peasy once you get the hang of it. I normally do a general tso's or orange chicken with the same chicken method, so tasty!
