I buy a bag of frozen meatballs to keep around. I also use them for spaghetti so they're handy to have in the freezer!

This soup is so fast to make. I love it when I'm busy and barely have time to throw something together. This comes together fast and is not too unhealthy! Also, I'm sure it would be delicious with any vegetables you have handy, even throwing some spinach in at the last minute to let wilt.

 

I have a bunch of soup recipes. As I pull them out to make I'll tag you and post them! Most things I make have to be weeknight dinner friendly. I do have a great potato leek soup that I only make on the weekends as it is labor intensive but it's Kiddo's favorite soup and worth the time.
