Ironically, I just made some instant mashed potatoes for my husband. Because, well that's what I can cook. Gotta' up my game for Thursday.

Oh, I'm on beer too. But I got out of Turkey, gravy, stuffing, pies, etc.... so feeling like I need to kill it with the appetizers (changed the word for @Razr ) and potatoes. Beer I can slam dunk.

Oh, you can toss some chives/green onions in there too.

Not an hors d'ouvre, but I've got a great kale salad recipe that is way more tasty than it sounds. The best part is it gets better if it sits overnight in the fridge (or even a couple days), so it's great to make in advance - let me know if you want the recipe.

Yes - chives and green onions will make it fancy!

100% would be eternally grateful for the Kale recipe. I like Kale and this is a kale group - lots of gardeners who grow it etc.

You guys have been a tremendous help - my original plan was to buy a bunch of Pillsbury dough and wrap it around whatever I could find in the fridge and call it an appetizer.

I was initially included on the "divvy up the food for Thanksgiving" thread but got booted after I suggested Football, Oysters, Brats, and Bacon. That's how I ended up on potatoes and appetizers. :)

    The base:
    1 bunch of kale
    1 clove or garlic
    1 tablespoon lemon juice
    Olive oil
    Salt

    My favorite extras:
    Red onion
    Sunflower seeds
    Shredded carrots

    Other shit we've tried:
Sweet/tart fruit - dried cranberries or tart apples
    Sliced almonds
    Parmesan cheese
    Hemp hearts
    Broccoli

The most important part is to treat your kale nice. Wash the kale and tear it into roughly bite-sized pieces, then add a pinch of salt and a drizzle of olive oil (just a little bit of oil goes a long way). Then give it a nice massage until the kale turns a darker, more vibrant green and shrinks down a bit. There should be enough oil that all the leaves get very lightly coated. The massage makes it more tender and less bitter.

Then add 1-2 cloves of finely minced garlic, about 1 tablespoon of lemon juice, and any large extras (I'd add shredded carrots, onion, broccoli, or apple slices at this point if I'm using them) and mix it all up. Then add the smaller extras you're using on top (any seeds/nuts, cranberries, cheese). You can add the smaller stuff earlier, but if you just put it on top at the end it's less likely that it'll all settle at the bottom of the bowl, which makes me irrationally annoyed.

I spent a couple years living with a fellow bachelor buddy of mine, and we used to get some sort of huge frozen rolled-up turkey and stuffing and mashed potato thing that was totally delicious. I don't know what to call it, and can't find it anywhere. But if any of the people who are looking for Thanksgiving advice want my opinion, if you see something like this, it couldn't hurt to have it around as a backup for all the traditional disasters that sometimes happen!
