The lasagna at my work gets made like once a month in giant batches.

to be honest. it's probably how most places do lasagna unless it's like super fancy.

Lasagna is a pain in the ass to make, and takes a lot of time. People don't want to wait, and it's not really feasible for a busy restaurant to do

 

This is true making a from scratch lasagna takes basically all day if you want to simmer that sauce so it absorbs the best flavors.
