03/14 - Take a Breather and enjoy some PI on a Saturday!

This is honestly one of the most difficult things about being a chef is leaving off that last step or two that you would do if making it for yourself. Lord knows what people would think if I served them dishes at my preferred spiceness level

 

I ate my weight in dairy queen and when I came back my panda had caught some surveys : D Double score.

The other week, I got caught flatfooted and didn't have lard, so I used butter. And that gravy was tasty... but weird.

 

Now I'm kinda worried for my mom because my dad is probably trying to talk to her.

 

wait ...isn't the recipe ground sausage, milk, flour? whats with the lard.

 

Write a book about it. Call it "intermittent fasting". Make millions.

the sausage doesn't have enough grease (fat) to render the sausage... so you have to add lard or some other fat to get a decent consistancy.

 

For those of us that are not hitting our daily goals I reccomend you try to reframe your thinking. When I first started and it was normal every day to make a few dollars I measured my earnings in things that mattered. Like cans of cat food, today I earned 40 cans of cat food. Sounds way more impressive right?

 

You just gotta learn to direct that energy away. My ex-wife had that shit down to a science. There used to be a rock wall between my backyard and the pool. She had me knock it down and put up a wooden fence by convincing me that I wanted a wooden fence there. I was half way through before I even noticed what was happening. We saved thousands of dollars that way though.

Ack, I feel your pain. Husband switched from working at a company for 20 years to running his own company from home over a year ago - luckily he has to go out and work quite a bit or we may have killed each other.

We have an aging population in this state and my Dr. told me that one of the number one sources of stress that she sees in her patients is when a partner retires

 

We started seeing an uptick in divorces in the 57-70 sector here when Iw as working at the law office still. A lot of them couldn't handle the togetherness.

 

Just learned that Maine has the highest median age of all states.
