Look for large lima beans. Be sure to over-night soak. (Some beans are somewhat toxic) I cook with celery, onions and ham.......Since they tend to break apart, try slow cooker......or an old trick: cook beans in one pot and vegetables/ ham in another and then spoon beans into vegies when mostly done. They don't need to cook too long. Don't get too watery. These beans need to be treated delicately. So don't beat them up with the spoon. Unless you want soup...Like Senate Bean Soup, which is similar.
