You're gonna want to use a high heat and imo don't skimp on the oil. Press, add whatever flavory bits you want, then oil, then cornstarch, then generous oil to cook in - for a beginner esp. Idk, I also just really like tofu and maybe you just aren't into it. I've only had a mushiness issue with softer varieties, firm should have been okay here. I end up with a crispy outside and chewy inside, not mushy tho. Even the pressing issue I would expect to result in uneven/torn kinda bits, that should have been okay if uneven on the cooking.

Also, if you really don't like the texture, you can freeze tofu to give it a sort of chicken nugget texture. Just defrost and drain like normal. Or you can drain and freeze if you like.

This image me think of a column I read once. A writer who wrote humor columns in a local paper wrote once about when he got his first newspaper job at a paper in some podunk area. He was just starting out and drove a beater which broke down on the highway. It was smoking, and he popped the hood. Something was on fire under the hood, and he wrote that he stood there shocked for a few seconds like, "Oh my God, what do I do!?" Then, he wrote that a country guy in an old truck pulled up beside him. The guy in the truck told him, "Your car's on fire." But the columnist said he had such a strong accent it sounded more like, "Ya car's on fahr."

He wrote that he was so stunned by the fire that he couldn't even figure out what the guy was saying to him at first, lol. So, now when I see someone with their hood open, I'll remember that story and think, "That car could be on fahr."
