01/09 - Winterized Wednesday!

Yeah, my family is kinda uh...trashy. Matt's mom does not approve. I do not go home much.

My arrangement was to move away and not really socialize with them much cause I end up falling into the same habits they all have. The last time we tried to spend a holiday there, Matt remarked that none of my family was sober at any point in the entire weekend. I almost yanked some hair out that weekend too and it's why I've spent like one holiday with my family over the past decade.

Arent they like 40 bucks too? I may pick one up, but I know I dont need another kitchen appliance that I need to find space for. :/ I can imagine that steak being perfect too.

 

A good starting place with sous vide are things that either are easy to overcook or take well to a sauce or marinade or both. Just make sure to give any meats such as steak or pork a quick hot sear when it gets out of it’s bath.

In general though if you think about what is actually being done anything that does well low and slow will do well sous vide. I have made some killer stocks and demi’s Sous vide and I love to get a soup or chili to a point where I like the seasoning and taste on the range and then sous vide it to intensify the flavors.

They are a ton of fun though and you can do a thousand things in them
