I hear you, and it's definitely possible if you really want to get another stamp in your passport. It really comes down to whether it's worth the cost of the flight, how much time you have, and what you'd want to do or what you'd find interesting. In your shoes with very limited time, I'd pick one of the following.

1. Auckland. I'd look to book a tour like one that I mentioned. Auckland is very cosmopolitan and doesn't really give you that NZ feel. It's very pretty, and you could spend the day on a harbor cruise, having lunch in the revolving restaurant which gives you stellar views, etc. Otherwise, look for a tour that hits up Hobbiton + Rotorua, the glow worm caves, a winery tour, etc.
2. Wellington. Hit up the big museum (Te Papa), go to Weta studios which is pretty fascinating, more winery trails.
3. Sydney. Walk around the Opera House, explore the area around Circular Quay. Take a tour inside if you feel so inclined (I have never been inside). Take a ferry to Manly and have lunch there. Etc.

There are plenty of suggestions online if you search for something like "what to do for one day in Auckland/Wellington/Sydney". Feel free to PM me if you want more specifics and I'll try and give you as much insight as I can.
