I did measure and weigh things out a bit. It was just regular flour, nothing fancy, though I've heard that rye flour is best. It sat on the kitchen counter at room temperature. Maybe the water needed to be a little warmer. There was one day when it puffed up pretty big and I was like "finally!!!!!" and it never happened again. Mostly, though, it sounds like I should have given it a bit more time.

 

One had an entire list of asking how many places you used to live. I just only one of the places where I used to live as a child. They still accepted it.

If they asking for signatures forget it, not doing it, even initials.

The warm water might have been the key. My water was filtered, but from the Brita pitcher I have in the fridge. Oops, I killed all the yeast critters.

For me, I find starting with a mix of rye flour and normal flour works super well and you can transition to just AP or whatever after like 10-14 days.

Mine has been a bit stubborn cause yeasties like to grow at about 80 degrees or so AND MY HOUSE IS LIKE 63 AT BEST!



I've named him SAD the sourdough starter and he's my baby, and every day I purge the weakest of his children so I can mix the strong with new flour with the goal of eventually cannabilizing his children over and over and over for baked goods.

Ok, you know what? Those kinds of questions are used by agencies to verify who you are. LIke, "Select from this list the place you have NOT lived." Important places use this type of verification that they pull from public records.

Anyone can gather all that info up, sure. It would take a lot of effort, though. Yeah, I'm not gunna give them all the identifying info. I like their hits, but I like my bank accounts and retirement accounts more.

I use filtered water personally, cause the tap water in my town IS NOT GOOD I heat it up to 80 degrees and mix. Easy peasy! Shiz in your local water can booch your yeast (for some folks, not everyone, it depends on your water supply). The yeast is literally in the air, that's why even if you start off with a starter from somewhere else, it will eventually become yeast local to you.
