I guess I could reinstall CK2.

 

These are more of a flaky puff pastry, with little cinnamon streussel cream cheese fillings and a normal glaze. A few have some chocolate shavings added.


The flowers are a danish (did a few more lamination turns and the dough has cardamom and is sweeter) with a vanille cream cheese/ricotta/butterfinger (lol yes, I went there) filling and an almond vanilla glaze.


The clamshells had a couple more lamination turns (closer to a croissant I'd say) and vanilla in the dough with a ricotta/cream cheese/vanilla filling. I alternated chocolate shavings and powdered butterfinger as a garnish for these (I have a bunch leftover from the cupcakes) and they are already gone cause Matt's coworkers just inhaled them Tbh, I also incorporated butterfingers INTO the butter I used to laminate out of sheer curiosity and it worked great!

I started with the same base dough and then split it into 3 sections and tested out different rest times/how many turns/add ins. It was fun! I think I'm gonna go for bi-color croissants & kougin-amann soon. The butterfinger danish flower was a gift for Matt, since he's been at work at like 4:30 every dang day and has to go in that early on Saturday as well, so I wanted to make something nice for him. He's jazzed, but also keeps telling me they are weird shrimps.

 

I just wanted to see, thank you! They turned out perfectly.

I used to be that way with my stuffed cupcakes and homemade candy.

 

I watched Matt stuff an entire pastry in his mouth and I tried to explain how hard I worked on that pastry and why it was cool. He double fisted two more pastries into his mouth, patted me on the head, and walked away with another.

 

And that is the best compliment you could receive. Well, maybe not the pat on the head.
