This is correct. A good thing to think of is whipped yogurt. Think about the pot marked texture that runs through it. The more you beat, the more air you incorporate into it. This causes it to rise higher when baking and fall when pulled and with nothing to fill the space, it cracks.

I have to fill out a bunch of paperwork first and get approved. I’m still on the fence. I feel like I SHOULD at this point? It seems like a waste if I don’t get more ambitious. There’s a dude who does French pastries but everyone complains that they aren’t very good. I feel like I’d do pastries and sourdough and rolls and maybe some sort of cake. Definitely pastries and bread. I feel like if I made smaller versions of my flower danish, those would sell well! I’m experimenting with bi color croissants and a few other things that aren’t super common here and I think would be eye catching.

I’m sorta anxious about it but Matt said he would be my farmers market slave and he wants me to do it.

 

For some reason, the only cheesecakes I’ve ever had crack much were ones I had to put a top layer on after baking. I’m not sure if it’s just cause I’m more mentally checked out or what
