I'd guess it's like a lot of Chinese powdered teas, the stems and veins probably aren't removed like you'd expect in a matcha, and it's not a shade grown, so it will be more bitter and with less chlorophyll it will have less of the "green" flavor than a traditional matcha.

 

My husband caught it too and has to actually do it as well.

 

prob would be fine for baking or smoothies when you add milk etc to it.
