After removing your cake from the oven, dust parchment with powdered sugar. Invert your sponge onto the parchment, then dust the top of the sponge, which will become the inside of your cake, with more powdered sugar, and then roll the sponge while it is still warm. Cool it seam side down on a wire rack, then unroll, fill, and re-roll. This will significantly reduce cracking your sponge, and is necessary if you want to do a chilled filling like iced cream, which would otherwise melt and soak the sponge.
