shut up lol. you're talking to someone eating a $1.58 can of progresso vegetable soup. it doesn't have to be fancy. it's soup, it's delicious and perfect as is, especially coming from you!

 

Half the time it seems like fancy soups are the easiest to make. I did some crab chowder a few weeks ago that I thought would be super hard and it was nothing. basic stews are way more work.

I wish I could ship you some. It really was good, and even better for lunch today, but I haven't had veggie soup in a while.

I'm thinking of doing pozole verde this weekend. I saw a recipe on bon appetit that looked amazing. Plus, I have chilies coming out of ears.

 

The best soup I ever had was a butternut squash soup, and I don't even really like squash. I was told it was literally just squash and cream, it's hard to call that fancy

 

i'll take a recipe! i love making it from scratch, i just couldn't be bothered today. i've got 3-6 inches of snow headed my way though, so i'm in full soup mode for the next, like, 6 months.

 

you stole my story. i had some squash something or other soup when a friends chef uncle from belgium came to town and made a giant elaborate dinner. while everyone was going to town on food i couldn't pronounce, i wanted to drown myself in the soup and die happy.

Oh goodness...I don't go by a recipe. I go by taste.

Green beans
Carrots
Peas
Corn
Boil those in beef broth til tender
Brown some ground beef while boiling the veggies and add that to the pot (grease and all, gives it more beef flavor)
Add a can of tomato sauce (15 oz?) AND tomato paste (small)
Season with seasoning salt, garlic salt and pepper to taste
Add about a tablespoon of celery flakes
Dice up some potatoes and add those to the pot and boil until tender

Boom, done.

 

Exactly, there's a time and a place for fancy, but it's hard to beat a simple, delicious soup
