Personally I like peppers and egg sandwich even better, and even simpler, peppers (preferably eyetalian frying peppers, or cubanelles) cook until your liking, throw mixed eggs in cook until you want, add hot sauce if you are compelled to. And dump on bread.
So simple and boring and lame sounding, but delicious.
