I made a 21lber for only 4 people, so I still have turkey frozen. Got some out the other day for turkey enchilada casserole. That was when I put in a bunch of work. Made the sauce from scratch, beans, rice, fresh salsa, and chile renellos. Took most of the day. Not doing anything with more than 20 minutes of work until Christmas.

 

I don't blame you one bit. I am freaking TIRED and just ready for the new year when I don't have to deal with anyone. lmao

 

Also this all sounds flipping DELICIOUS. This may be our Christmas day dinner, with tamales of course. Christmas tamales are my FAVORITE christmas tradition.
