@moonshay76 I just tried your egg taco thingy and it was amazing! I think I put the tortilla in too early though because it kinda started falling apart before the eggs were cooked, so I topped it with cheese and then added a second tortilla when the cheese was melted, so it was like that Taco Bell monstrosity of tortilla-cheese-tortilla making up the taco shell. Topped with green onions and a sauce I threw together (mayo and hot sauce, nothing fancy).

Next time I'll add the tortilla later, add mushrooms and garlic with the eggs, maybe some spinach or something green (mostly out of a sense of obligation), and try out subbing greek yogurt for the mayo.
