I make my tortillas with bacon fat but somehow have just always used butter in my biscuits

You know how I love my high butterfat butter more than anything else haha.

We have a restaurant in Portland Maine called Duck Fat - where they cook most everything in duck fat. It is one of my favorite places on earth

The non chef smart ass answer is cook bacon. Add sausage to same pan without draining. Cook sausage. Add flour. Add milk a half cup at a time until desired thickness. Salt and pepper to taste

 

That's very efficient though, an entire day's worth of calories in one sandwich.

 

I have a friend that doesn't eat bacon and it's really made me get creative with some my recipes where starting with bacon fat is no longer an option On the upside, I did tweak my sauce recipe to use chicken confit this way.

I know how to make gravy. I was just more shocked that sausage is getting leaner to where a pound of sausage doesn't have enough drippin' to make gravy.
