I think it's a really good compliment to strong flavors (mostly spicy stuff or stuff with a lot of acid) and the creaminess really accents things nicely, but that's just me. I couldn't live without mozzarella.
On the other hand, if you're talking about stuff like super-sharp aged cheddar (at room temperature) then I'm right with you!
And for what it's worth, if any of you like extreme cheddar, a similarly lip-puckering bone-dry red wine goes great with it!
This kind of wine is also great with eggs.
And of course after all these years it only just now crossed my mind to drink a dry red with a cheddar cheese omelette!
