    I press the everloving fuck out of it, then marinate in whatever sauce I'm gonna use. Coating in peanut butter and baking is amazing too.

    It was invented in east asia, so I can't imagine it would be too hard to search up some asian recipes with it.

    She also has amazingly authentic recipes (vegan included) that I LOVE. Maangchi does a lot of really spicy things though so be careful with her spice levels.

    Tofu is one of my favorite foods.

    Peanut butter, soy sauce, whatever spicy thing you like (sriracha or garlic chili paste or similar), tons of garlic, water if needed to get to a thick sauce consistency. Coat and bake at a fairly high heat to get a bit of a crust. Goes really well with soba noodles, using the same pb mixture as a sauce.

    What I do most often - soy sauce, spicy thing, tons of garlic, ginger, honey, lemon juice, whatever else you have lying around that sounds saucey, then probably some more garlic. Press for hours or overnight, then marinate for as long as you can stand to wait. Drain off excess liquid (you can use as a stir fry sauce or glaze while cooking), toss in a good amount of cornstarch, then fry in some v hot oil. You don't have to worry about cooking it through or overcooking, so you just want to use high heat to get the outside super crispy and chewy.

    If you want to experiment further, doing a few freeze-thaw cycles totally changes the texture too. I almost exclusively use extra firm too, unless it's gonna get blended.

    Oh that looks delicious. I wish rum didn't make me immediately dysfunctional.

    Maangchi is so sweet. Also, Yan Can Cook from PBS is awesome. It's a bit of a throwback, but super accessible with ingredients and methods.
