    Most Chinese places have at least 1 if not 2 super-high BTU burners to use. Western cooking is generally slower (all day warm hearth), Chinese cooking is traditionally fast (don't waste fuel).

    But try a traditional American place that uses a real broaster. Nothing like 25 gallons of 350F oil under 15psi to keep you on your toes. I'd love to have one of these things in a shed out behind my house, nowhere near my house, but within walking distance. :emoji_joy:

    Yeah from the chinese food we cook most of it is prep with very little 'cook time'. Reminds me that we need to go to the Asian market and get more sauces. We just ran out of douchi and are running low on our tub of mushroom soy. I also really need to restock of my pickled radish packs. I'm hoping they have pork floss in stock again because aint nothing better then a pinch of pork floss in a bowl of noodles or a pork floss sandwich.

    I caved about 4 years ago and got a set of 20 matching pairs of black chop sticks that can get tossed in the washer. Never went back. I've had 2 snap over those years but like, we use them for near everything so I'm not shocked.
