China has Scallion pancakes that are just amazing.

 

It's lazy quesadillas (little tortillas so I don't have to try to fold the shit in half) then once the tortilla is crispy I put cheese on the outside and make it crispy again. Love pan fried cheeseeeeeeeeeeeeee.

Oh man that makes me want a quesadilla!
We take two cast iron skillets. One large and one smaller. Heat them both up at the same time. Place the tortilla in the large on and add your fixin's. Place the hat tortilla on and the take the little skillet that's been heating up and put it on top of the hat. Let cook for a bit until desired doneness. Wipe off the bottom of the little one before you place it back on it's warming eye.

A while back my stupid cat knocked the fan over and it broke one of the blades off. Turns out by having a blade removed it makes it all unbalanced. Not knowing this - I turned it on and the damn fan started running down the hallway.

Thankfully I was able to catch it.

After I corralled the fan I took the cage off and decided to epoxy the blade into place. I waited a few hours for it to dry. And turned it on to give it a test before putting the cage back on. The blade flew off straight into the wall and left a doozy of a mark.

So then I threw the fan away. It was a good fan.
