I love that gif but I can never find it when I actually want it

 

make a couple slits in the fat and season with salt and pepper. Get two pans ready on the stove. Coat the bottom of one pan with a thin layer of olive oil turn heat to high. Wait for oil to start smoking then dump it into the other pan you have ready. Put duck into the original pan fat side down and turn down to medium heat. Sear the fat side until golden brown then flip. Cook on other side until medium rare to medium, this will only take a couple minutes. Will be delicious on its own at this point but can be topped with any number of sauces
