I reached out to AWS regarding the DAC7, seeking clarification on whose tax info they'd be sending to the EU. Just didn't make sense to me that US tax payer info would need to be sent. They came back with a slightly modified version of the canned response I've seen on threads here and on reddit. The response seemed to verify that all mturk workers' tax info would be sent, so I pressed further. I asked under which circumstances my income from mturk would be taxable by the EU, and their response was as follows:

"All Mturk income is deemed as taxable by the EU and we also anticipate this to be rolled out to much wider than just the EU."
