I have the Victronix paring knife, mainly b/c it was $7.
I will not spend more than $30 on a chef's knife, though.

Right now I am using a totally kick-ass serrated, all-metal Steak Knife for a Chef's Knife

 

Dexters are nice. Pretty much the go to, standard knife that every restaurant has several of in the kitchen.

 

i've been thinking about this gif for the past hour because i feel so bad for the boy. i hope he grew up to be awesome. he's adorable.

I got that entire set as a gift something like 7 years ago, it's still in great shape. I had to replace the knife block though because Bearnie had a fit of insanity and decided that he would send the entire knife block flying off the top of my fridge in my really old apartment years back. (the cabinets were so close to the counters it didn't fit). I literally look up and see Bearnie frantically windmilling while an entire knife block with airborne knives flies through the air. We literally pulled one out of my wall.

This will be something I will feel good abusing, so I can focus on the food not protecting the tool. Which I am obsessive about. I had a hard time learning to MIG weld... not because it was hard, but because it ate tips and spattered on the nozzle. Horrors!

You just steel them and now if I do cut on steel, stone, or whatever if I want to real quick, no worries.
