    There is a wide range of southern bbq styles. Pork or beef, vinegar based, mustard based, or ketchup based sauce. Where I'm from it's pork with a vinegar based sauce. If you go east of me the sauce is more mustardy. West you get more ketchupy. Texas you're probably getting beef.
