Sorry it didn't work out Extra firm is pretty much all I use. Do you remember what you had? Sounds like mostly a texture issue? I pretty much always press the ever loving fuck out it, but again extra firm buyer. When I'm lazy tho I have just like not pressed at all and it's been okay - not good for sure, but ok. I always bake it too because, again, lazy, but frying is probably better tasting.

What I think I remember I did was wrap the block in a towel, then put a cast iron skillet on top. Unfortunately I didn't center it well so it smushed down one side more than the other and it kind of bursted out the side and made it too mashed and I couldn't really form it back together well.

I then chopped into cubes (some of which were mushy due to the burst) - and rolled the cubes in cornstarch. Then I baked them in the oven to Brown the outsides. And then fried it in the sauce I made for a bit.

Just turned out really mushy.

It was the "firm" type

 

Yeah lmk what kinda dish you're looking for. Obvi I'm no real expert, let @dan down with my advice. I'll do my best tho.

Yeah, no... I don't believe someone would willingly use dark theme. That's clearly Photoshop.

yeah firm isn't the same and the weight issue and the smushing. It just sounds like you had a bad time from the start

people who work in light theme are daemons

 

The sauce def had sesame oil as well but that wasn't until.the end, but I don't believe the mushiness failure was due to oil or anything other than fucking up by mushing rather than firming while pressing.

Just gotta make sure to press more carefully and possibly get extra firm to make it easier to.keep firm
