Eh, sous vide annoys me tbh, but a reverse sear is really just the opposite of finishing a steak in the oven. I do pan sear only sometimes, but with a certain thickness/type of steak it just isn't gonna cut it to pan sear only. This was one big ass steak meant for 4 sammiches, so it was a big sucker and I enjoy the consistency. I just like different methods depending on the cut or what I'm using it for. I get extremely anal retentive about a perfectly even steak when it comes to a steak sammich. I'm a stickler.

Things are very iron chef in my house, I'm a little terrifying. If you're in my house, your best bet is to never cross the threshold of my kitchen, and just eat whatever plates I thrust at ya.

nah, that's "normal" - wimplo gets it a bunch, dan does, i do, jesicu has been. it's a thing for no real reason. i think it has to do with scripts running. dan's method is to shut everything down and open one mturk window to sign back in. that has done the trick for me the last few times it happened. you can end up getting locked out for hours if you don't fix it right away. it's obnoxious and scary for sure, but, as long as it isn't someone trying to hack you, it's probably just that screwing up like it has for us.
