IDK man, those egg McMuffins are pretty good.

 

I use it for onions and carrots a lot too, especially when I'm doing a sauce/soup/stew. I also like to add a bit to the mix if I'm sauteeing meat or whatnot. A lot of recipes will actually have you reserve some of your bacon grease after you do the bacon and have you do your veggies or whatnot in the leftover.

I'm doing pot roast today (sorry for the late response!) and I started my chuck roast and onions/garlic/carrots in a little bacon fat! A+. I use it with a lot of Spanish recipes too, my Aunt swears by it. It's good for eggs too! Or rice! I always saute my rice in a little butter or bacon fat with garlic and onions before I cook it and it's A+. Matt likes it when I add it to green beans with almonds or spinach too.

Oh man, if you ever make aioli, bacon aioli is a killer. I use it for paninis and stuff!

I might use bacon fat in about 500 more recipes than I thought of till just now LOL.

What I consider Canadian bacon to be, is peameal bacon, which is cured pork loin and looks like this:
