02/10 - Sweet Saturday!

I always do this at fly ins/ dirt bike days/ etc. Everyone will be like, eating the crappiest stuff the threw together or forget to bring something and have to go get the nearest fast food place out in the middle of nothing. We always roll up with my insulated bag full of fancy sammiches, gatorade, red bull and a bag of chips or something. (I went with ranch fritos this time. I went with jerky and cheddar last time. I once even made made caprese cause I decided to be fancy for the eclipse.) I'm the priss around these parts!

I feel ya. I save all my veggie peels/odds and ends in a bag in the freezer and I make stock with the chicken carcass and the veggies. I threw in some pepper ends along with the carrot/onion/garlic shreds last week and the stock made the best base for bean and bacon soup. It was super good. I hate waste and I like making everything from scratch because, well, see above. I am the worst priss possible.

 

I'm trying to think of a place I've been banned from , but I'm coming up blank.

Matt, on the other hand. Let's just say, in theory only, he was maybe semi-banned from a country for a few years. I will neither confirm or deny this though.

 

Stock is everything

 

Have you ever made a chicken demi-glace? Oh man, I do that and cube it, and it's like chicken stock on crack. It's super handy to toss into certain recipes for a flavor kick or for a fancy sauce base.

I do like 24-36 hour chicken stock. I probably should just speed it up and do a demi-glace instead, mainly for space saving in the freezer - or having anything leftover FOR the freezer, but I usually end up just making a huge pot of soup with it after finishing the stock. I neeeeed some soup soon.

 

Because I don't get in trouble?

I make a whole chicken 3-4 times a month, so I'm always mass producing stock like a little keebler chicken elf.

I love using the leftover chicken in the drippings for recipes too. A few weeks back, I did smoked paprika roasted chicken and used the drippings with some wine and a little homemade stock to make a sauce, added some red beans+rice+bacon+ poached eggs and a sprinkle of smoked cheddar. OM NOM NOM. I was shoveling that stuff up like a tiny vacuum.

Ohhh yeah, bone broth. Om nom nom! I make a version for Bearnie.
