    2 eggs, in glass

    1/2 avacado
    1/4 tsp lime juice
    1 tsp salmon roe (may substitute smorgaskaviar)

    12 ounces water

    prep time: 3 minutes
    consumption: 1 minute
    cleanup: 2 minutes

    Snow is finally coming to an end here in New Hampshire, cleared 20 inches from the drive yesterday and another 4 or 5 this morning. With last weeks 18 I am officially sick of winter, waving my white flag.

    We had a pack of bacon left over from, umm, some time ago, and my wife was ready to chuck it. "NOOO", I calmly screeched, "I'll use it". Cooked it up, there was enough for three bacon/egg/cheese muffins which I wrapped up and stuck in the freezer.

    I've had two so far for breakfasts this week and I'm not dead yet, so clearly the expiration date on packets of bacon is a complete lie.
