I've made mozzarella and ricotta before, so I'm not too freaked out of it, just sighing at the time commitment. I've never made burrata before, but that's basically just mozzarella with added steps and if I fail, nobody will ever know! I'm supposed to make smoked butter this summer! We have to smoke the cream first and then make the butter, should be fun! I want to test my theory of smoked butter in chocolate chip cookies

I'm baking off all the bread this week and sealing it/chucking it in the freezer and prepping my pizza dough/sauce (for the hand pies) and chucking that in the freezer as well, so I won't have to worry about bread or sauce making the week of. I'm going with hand pies, cause I can assemble them a day or two before and then just bake them off before everyone gets here/less fussy than trying to bake like 6 pizzas while people are in my house. Everything else is crostini/tiny sandwich themed (smoked chicken and bacon, caprese, ricotta with cured egg yolks) or skewered (marinated mushrooms and onions). It's not as crazy as the christmas party, I don't think anyway.

Well I have a marriage fraud interview at the US embassy at 7:30 tomorrow morning.. I am worried they are going to ask my wife if I can tie my shoes. I think I am going to have to come clean with her before the interview. So i am trying not to blow that.
