They have a nifty little scrubber doo dad too! I used to do salt and scrub, but someone got me one of those chain mail lookin suckers for my birthday and it's aces. I use it on a ton of my pans, loveeee it.

 

The purpose of good stainless steel is to be thin. Heats up quickly and dissipates heat quickly. That's the opposite of what you need for meat.

If it retains heat, then you don't have a good stainless pan. You just have something that will scorch butter, onions, mushrooms, and anything else you need to cook quickly.

You season before using it. You can add oil on after cleaning or before using it though. You should be reseasoning your pans that often.
