    This makes me feel better about the fact I did almost nothing today but cook.
    I had thawed a turkey I bought last winter and basically made Thanksgiving today.
    Spatchcocking a turkey actually works out pretty well. This is the first time I've ever made a turkey that was perfectly golden skinned and not slightly tanned on top with pasty pale sides. And it was done in around an hour and a half.
