    I've made cornbread with regular milk before in a bind but it usually ends up way denser. Buttermilk makes it was more light and fluffy and I hate making it without.

    Wish I could give you a recipe but I just sorta eyeball everything because I know the consistency I like the mix.

    I mean the basic way I do it is cornmeal (I use white, others use yellow) toss in 2 eggs, some oil/Crisco and milk. I stir until it's how thick I want and then I toss it in to bake.

    Some people like a super hard crust on cornbread but I don't personally. I watch it closely and the second it's done I yank it out of the pan and get it on a plate or something to keep it from crisping up.
