Solid advice. However I really, really hate to cook in general. Which is why it works to live with a former chef. Because I love food. So, although I would love to test cook this all out... I think I'm going to just go for it on Thursday morning and hope for the best.

I'd probably use a brick for a 5-lb bag or potatoes, yeah. You can always add it a little at a time and then just eyeball it as you go - you'll know what consistency looks good.

Block of butter for sure, small thing of sour cream, and then cream to consistency you like. If you also add some of that parmesan cheese in a can you can add more cream. Definitely need the defib then though.

Thin with milk as needed, if needed. Just keep "testing" until you barely have enough to serve. Top with chives when you serve, so then it counts as a green veggie.

 

use a starchy spud like russets, don't overcook them, and make sure you don't add too much cream/milk at first -- after mashing add about half as much as looks right, whip it with a fork, then taste and adjust

Well, apparently Pack can't win in California. That has been our two debacles.

Oof being a falcons/broncos fan is tough. Falcons - the Colts game was a heart breaker and the Cardinals was an even tougher loss. There were some stompings in there but I still start Julio every week in my other ff league and he's gotten me to 10 and 2. You've had a bunch of close ones mixed in with the off the charts ones.

Loving the sour cream and parm add. If I keep with the suggestions I will have potatoes with a pound of butter, bacon, cream cheese, sour cream, parm, chives... those should win Thanksgiving right?

 

It was the worst. And such a wacky game. Weird turnovers. And no team had made a third down conversion. Just a lot of sadness. The one time brats didn't help.
